    Food and Beverage Controller

    Position Overview;

    The Food and Beverage Controller will be responsible for overseeing and managing the financial aspects of the food and beverage operations. This role requires one who is  attention to details, strong analytical skills, and a deep understanding of inventory management principles to ensure cost efficiency and profitability while maintaining high-quality standards.

    Key Responsibilities:

    • Develop and implement inventory control procedures to effectively manage food and beverage stock levels.
    • Conduct regular physical inventory counts and reconcile inventory discrepancies.
    • Monitor inventory turnover rates and identify slow-moving or obsolete items.
    • Coordinate with the procurement Manager and Store Keeper to ensure timely replenishment of stock and minimize out-of-stock situations.
    • Implement FIFO (First-In, First-Out) and FEFO (First-Expired, First-Out) principles to minimize wastage and spoilage.
    • Analyze food and beverage costs, including raw materials, packaging, and labor, to identify areas for cost optimization.
    • Prepare and analyze costing reports, variance analysis, and profitability reports for management review.
    • Monitor and control food and beverage costs against budgetary allocations.
    • Provide recommendations for menu engineering and pricing adjustments to maximize profitability.
    • Collaborate with the F&B manager to develop menus that balance cost considerations with guest preferences and market trends.
    • Implement pricing strategies based on food and beverage cost calculations and market demand.
    • Monitor sales trends and customer feedback to make informed decisions about menu adjustments.
    • Ensure compliance with internal controls, accounting standards, and regulatory requirements related to food and beverage operations.
    • Address any discrepancies or issues identified during audits and implement corrective actions.
    • Maintain accurate records of inventory transactions, cost calculations, and financial reports.

    Qualifications and Skills:

    • Bachelor's degree in Accounting, Finance, Hospitality Management, or a related field.
    • 3 years plus proven experience in food and beverage cost control, preferably in a hospitality setting.
    • Strong analytical skills and proficiency in financial analysis tools and software.
    • Excellent knowledge of inventory management principles and accounting procedures.
    • Familiarity with food and beverage cost calculation methods, such as portion costing and recipe costing.
    • Ability to communicate effectively with cross-functional teams and stakeholders.
    • Detail-oriented mindset with a focus on accuracy and precision.
    • Proficiency in Microsoft Excel and other relevant software applications.
    • Flexibility to work irregular hours, including evenings, weekends, and holidays, as needed.
