Overall Responsibility

The successful candidate will have an overall responsibility of achieving efficiency through provision of good quality meals within the approved budget while maintaining high standards of hygiene and customer satisfaction.

Duties and Responsibilities include but are not limited to:

1. Planning menus in consultation with the Nutrition Department.
2. Plan and coordinate all aspects of catering, including service activities and sanitation responsibilities.
3. Supervise kitchen staff and ensure high quality service standards and presentations are met.
4. Organizing staff rota to meet service needs.
5. Ensuring that health and safety regulations are strictly observed, recorded and archived.
6. Maintain and upgrade strict hygiene and sanitation practices and levels.
7. Update and compile new products and menus according to market availability and customer needs.
8. Food cost budgeting and maintenance of financial and administrative records.
9. Develop methods to assess staff time and other resources required to meet hospital standards.
10. Maintaining correct stock levels & Ensure proper stock rotation.
11. Ordering of foodstuff from the food store.
12. Estimate food requirements and food costs and application of cost cutting measures.
13. Ensure proper handling and continuous maintenance of equipment and utensils

Qualification and Requirements.

1. KCSE Mean grade of C
2. Diploma in Food Production and Service; or Food and Beverage Production or equivalent qualifications from recognized institution.
3. Computer Literate
4. Experience in a Hospital setting an added advantage
5. Management training an added advantage
