Ensuring the production floor, walls and equipment are cleaned and sanitized as per cleaning procedures before the start of production.
Ensuring correct types of cleaning solutions are used in cleaning floors, walls, and equipment.
Ensuring that the right temperatures, concentrations of cleaning solutions are used during cleaning and sanitization.
Ensuring that equipment is properly cleaned and sanitized before use
Ensuring that cleaning and sanitation documentation is done as per company procedures.
Process production orders in order to requisition for raw materials from the raw materials stores in time.
Ensuring that all processing ingredients are available in the production in time for cheese processing and in the right quantities
Ensure that all ingredients, cleaning solutions, sanitizers used in the processing floor are properly labelled.
Ensuring that milk used in processing cheese meets specifications as per the company’s procedures (butter fat, protein content, age of the milk, aflatoxin & antibiotics composition)
Ensure the right types of cultures and rennet are used in producing cheese as per production procedures.
Ensuring that critical process parameters for the processing of cheese are observed and recorded as per company procedures.
Ensure proper documentation of production and packaging processes.
Ensure that products are packaged hygienically in appropriate SKU’s and packaging material.
Ensuring closing production orders and transferring processed cheese to FG section.
Ensuring that packaged products have correct traceability records
Reporting machine breakdowns to the technical team for maintenance
Ensuring proper machine hand over procedures are adhered to before using maintained equipment
Ensuring the right yield and plan adherence are achieved.
Giving daily reports to the section head
Qualifications
Diploma /degree in Dairy technology
Not less than 2 years’ experience in a dairy processing company.
