    Sous Chef

    Reporting to the Executive Sous Chef, the Sous Chef will coordinate, plan and supervise the production, plating and presentation of the food at all events in a cost effective, safe manner to meet/exceed customer expectations and attract future business.

    What You Will Be Doing

    • Review daily function notices, allergy notices, and weekly forecasts and communicate with staff through regular departmental meetings. Be proactive when dealing with allergies.
    • Knowledge of all kitchen stations, allocate staff and/or assist in peak periods as needed
    • Lead the culinary team, ensuring all staff maintain a safe and injury free workplace by following Safe Work Practices, complying with all Sanitation and Health and Safety standards, and ensuring the safe operation of all kitchen equipment
    • Review menu standards and recipes - update Cooks and Service staff on features and offerings for day
    • Producing meals of the highest quality, exceeding our guest's expectations. Ensure food preparation and presentation standards are upheld and prepared according to the specified menus and daily function notices.
    • Ensure all food and operating supplies are ordered, delivered and available for day/evening operation.
    • Ensure daily food costs and payroll management are in line with forecast and budget allocations
    • Continually promote professional work habits, good relationships with other hotel departments, and rewarding a job well done.
    • Collaborate with both front line Outlet Manager and Servers to ensure respectful and cohesive focus on all aspects of an outstanding Guest dining experience.
    • Ensure action plans from Colleague Engagement Survey are established and achieved.
    • Participate in the weekly Chef's meeting - advising updated operational deadlines, successes and challenges
    • Work within budgeted guidelines, and take responsibility for the minimization of: Labour costs, food costs, food waste, and additional expenses - monitor, track and adjust according to forecasted updates.
    • Create menu standards, complete with pictures and recipes
    • Ensure all equipment is in working order - process repairs or replacements in timely fashion to avoid negative operational impact.

    Your Experience And Skills Include

    • Highly energetic and excited about the challenges that a large and versatile resort offers
    • Minimum of 7-8 years’ experience in a culinary leadership role
    • Diploma level formal training in culinary
    • A passion for food and desire to further develop culinary and leadership skills
    • An effective supervisor and trainer
    • Innovative, detail-oriented and quality conscious
    • Actively seeking knowledge of new trends in presentation and preparation
    • Self‑motivated, with the ability to make effective decisions
    • Demonstrates initiative, and the ability to multitask and work with minimal supervision
    • Ability to maintain high service levels under pressure
    • Physically fit to lift trays repeatedly, stand and walk for the duration of the shift.

    The Bartender ensures that the bar attached to him/her is clean and tidily arranged and beverage cost is low. She/ He reports directly to his Outlet Manager and to undertake full responsibility of bar stock and service as requested by the Supervisors. Thorough knowledge of the products of the certain bar and specialties and service required. She/ He is aware of the beverage incentive of the outlet inclusive of the drive to achieve absolute beverage excellent as required.

    What You Will Be Doing

    Reporting to the Outlets Manager, responsibilities and essential job functions include but are not limited to the following:

    • Good knowledge of the drink prices, bottle prices and all beverage policies.
    • Able to mix all the international cocktails as well as the cocktails in the hotel.
    • Maintain the highest standard of drink preparation and ensure that every aspect of a drink is carefully looked after.
    • Able to handle complaints efficiently and report all complaints to his Supervisors.
    • Able to recommend and push for beverage sales.
    • Check that all hard liquors are kept and locked.
    • Always comply with the Hotel’s policy and standard of service.
    • Always utilise the standard jigger when pouring liquor.
    • Attend daily roll calls.
    • Attend all meetings concerning certain outlet’s as instructed by the Supervisors.
    • Clean the bar outlet on a daily basis for an excellent working condition using the inspection checklist.
    • Conduct herself/himself in a manner expected of a bartender and member of the F&B, gaining the respect of his fellow workers.
    • Do cashiering whenever required.
    • Take food order and serve food in any outlet that you are attached.
    • Able to use the computer for requisition of beverage stocks.
    • Comply with hotel and department policies and procedures at all times.
    • Carry out any other duties as and when assigned by the Management of the Hotel and department.

    Your Experience And Skills Include

    • skilled in Bar service and supervision with the ability to work in a multicultural and diverse environment
    • penchant for customer service and effectively manage guest complaints
    • ability to train and manage a dynamic team
    • excellent English communication skills; both verbal and written
    • minimum 2 years supervisory or team leader experience in a hotel environment is essential
    • knowledge of Micros or similar POS systems, Opera or similar PMS systems and Microsoft Software

    Digital Marketing Executive

    Working closely with Director of Sales & Marketing, in this role you will be responsible for enhancing and maximizing the profile of the hotel through all forms of media, including digital, social, online, direct marketing, print and radio. This includes website content management on both owned and partner sites, promotional partnerships and public relations. This role works closely with the DOSM and Accor’s regional marketing team.

    What You Will Do

    • Manage all aspects of our online presence and content updates
    • Mange all aspects of social media content production and scheduling on Facebook, Instagram, Google, and LinkedIn
    • Develop content and promotional material to support Fairmont Mount Kenya Safari Club marketing campaigns including sponsored socials content, stories, in-house photography, videography, and graphic design

    • Proactively identify advertising and PR opportunities that align with the hotel brand, in both digital and offline media and present these to the team for discussion and action
    • Identify new opportunities for partnerships that will generate revenue and support the overall strategy of the hotel
    • Understand and use web analytics to report on current activities, identify new opportunities and support areas of improvement
    • Oversee all hotel internal and external marketing including collateral for the hotel
    • Managing and updating the image library including photography, descriptions on website
    • Ensure Brand compliance in the hotel
    • Support business growth, drive sales, and submit regular reports as required by the Director of Sales and Marketing.
    • This visible role will work day to day as part of the sales squad, plus working closely with Fairmont Mount Kenya team
    • About You:
    • To be successful you will have proven experience within the Marketing in a similar capacity, you will have the ability to see things differently with creative flair, you will challenge the status quo and you will love working in an inspiring and fast-paced environment. You will have effective relationship skills and the ability to build excellent relationships with stakeholders & colleagues.
    • Excellent Microsoft Word/Excel/PowerPoint/Outlook skills, with competent use of other relevant applications.
    • Proven ability to successfully collaborate with a wide range of internal and external stakeholders – from junior to senior executive positions
    • Past experience in creating content (photo, video, text) is optional but preferable
    • Knowledge of Adobe Photoshop and Canva is optional but preferable
    • Understand digital platforms and have the ability to analyse their performance
    • Proven experience in digital platforms
    • Tertiary qualifications in Business with a major in Marketing or equivalent is desired
    • Experience within the hospitality/tourism/events industry advantageous
    • An analytical mindset, focused on driving commercial outcomes for the business
