Food & Beverage Manager at Safari Beach Hotel

Location     :  SAFARI BEACH HOTEL (along Beach Road Diani)

Reports to :  C.E.O.

Oversees     :  Restaurant Hostess, Glass hands, Runners, Wait Staff, Bartenders, Mixologists, Baristas and casuals.

Job Summary

Safari Beach Hotel in Diani, South Coast is looking to recruit a competent F&B Manager to oversee the smooth operations of our Bushtracker Bar, Beach Bar, Tight Lines Bar & Lounge and Brasserie restaurant. This could be a resident or swilling to relocate to the area.

Responsibilities include

1. Manage and organize the restaurant staff as per desired job expectations.
2. Develop, and implement F&B  policies and procedures
3. Conduct routine staff briefings in respect of operational issues. 
4. Prepare departmental budgets and derive sales targets for the staffs.
5. Monitor and verify accuracy of orders, bills and payments via POS system.
6. Compile, review and circulate timely operational reports to the respective persons.
7. Assist customers in all inquiries in connection with hotel services/facilities.
8. Offer professional guidance and resolution for guest complaints and staff conflicts.
9. Develop and implement strategies to improve uptake of F&B products by clients.
10. Proactively seeks out business for events, banquets and function hosting for the Hotel.
11. Provide HR  administrative support in respect to duty allocation, shift planning, leave/off planning
12. Maintain sanitary conditions of the bars and restaurants.
13. Ensure staff compliance to statutory regulations especially to health certifications
14. Requisition and receive operational supplies whilst maintaining an accurate inventory.
15. Promptly report all maintenance problems to the Repairs department and ensure follow up.
16. Closely monitor food orders, portion sizes, garnishing and presentation.
17. Able to delegate tasks where needed.
18. Perform any other responsibilities as assigned.

Qualifications

1. Preferred tertiary training in Hotel/F&B operations with professional certification to match.
2. A minimum 3 years Managerial / leadership posting in a busy hospitality establishment.
3. Good Communication with excellent presentation & customer service skills.
4. Computer literacy and working knowledge of POS systems.
5. Must be a team player. 
6. A self-starter, go getter, fast thinker and able to multi task.
7. Good composure and temperament able to work in a fast paced environment.
8. Must have a valid Food Handler certificate.
