    Butcher - Hotel - Mombasa Road

    Role Objective:
    A hotel is seeking a skilled and detail-oriented Butcher to join its team. The successful candidate will be responsible for preparing, cutting, and packaging meat products to meet high-quality standards, while maintaining strict hygiene and safety practices.

    Core Duties and Responsibilities

    • Cut, trim and prepare different types of meat according to customer orders and company standards.
    • Prepare popular meat cuisine such as Nyamachoma, Wet Fry etc.
    • Ensure all meat is handled properly to maintain quality, freshness, and hygiene at all times.
    • Clean, sanitize, and properly maintain all tools, equipment, and work areas on a daily basis.
    • Check meat deliveries to confirm quality, quantity, and freshness before storage or use.
    • Package, weigh, and label meat products correctly for display or sale.
    • Monitor stock levels, report shortages, and help with stock rotation to reduce waste..
    • Follow all food safety, hygiene, and occupational health and safety rules.
    • Greet customers politely, listen to their needs, give advice on meat selection, and handle orders or payments when required.
    • Collaborate with team members to ensure smooth operations in the meat department
    • Communicate with suppliers to place, confirm, and follow up on orders.
    • Coordinate deliveries and ensure proper storage of all meat supplies.
    • Report any equipment problems, quality issues, or safety concerns to the supervisor.

    Job Specifications and Qualifications:

    • Minimum of 2 years’ experience as a butcher in a hotel setting.
    • Certificate or diploma in butchery, meat processing, food science, or a related vocational course.
    • Strong knowledge of cleanliness, hygiene, and safety standards.

    • Expertise in meat cutting techniques and safe operation of butchery tools.
    • Excellent attention to detail 
    • Organizational skills.
    • Physical stamina to stand for extended periods and handle heavy meat products.

    Assistant Food and Beverage Supervisor -Hotel- Amboseli

    Core Duties and Responsibilities

    • Supervise daily operations to ensure seamless restaurant functioning.
    • Responsible for maintaining standards in the restaurant by ensuring hygiene controls, housekeeping and procedures are followed.
    • Liaise with Front Office or Reservation desk to ensure all details of bookings are covered.
    • Ensure high levels of customer satisfaction through excellent service and handling of complaints promptly and professionally.
    • Monitor operating supplies, stock levels, place orders, and ensure proper inventory management, equipment and reduce spoilage and wastage successfully and ensure there is no pilferage.
    • Ensure compliance with food safety, hygiene, and sanitation standards.
    • Assist in training new staff , implementing service standards, aspects of service techniques and operations.
    • Manage food and beverage service staff including scheduling, delegation of duties, and performance monitoring.
    • Enforce conformity to SOPS applicable to the restaurant.
    • Coordinate with kitchen staff to ensure timely food preparation and delivery.
    • Perform opening and closing procedures established for the restaurant.
    • Attend and contribute to all staff meetings, departmental trainings and hotel initiated trainings scheduled.
    • Conduct briefings on the special events, the specials on the menu, beverage specials, missing items and other occurrences of relevance.
    • Checks the cleanliness and condition of furniture, linen, cutlery, chinaware, glassware, condiments and other service accessories and takes appropriate corrective action where necessary.
    • Attends guests\\\' complaints and takes corrective action immediately and escalate where need be.
    • Prepare daily reports on restaurant activities, sales, and staff performance.
    • Maintain and ensure cleanliness, order, and ambiance of the restaurant at all times.
    • Perform any other assigned reasonable duties and responsibilities as assigned. 

    Job Specifications and Qualifications

    • Diploma in Hospitality Management, Food and Beverage, Business Management or related field.
    • At least 2 years of experience in a similar position within a busy restaurant/hotel environment or Hospitality industry is preferred.
    • Knowledgeable of food safety and hygiene regulations.
    • Proficiency in Microsoft Office Suite.
    • Working knowledge of POS systems
