    Lodge Manager

    The successful candidates must have at least 5 years Managerial experience in a high end Lodge or Tented Camp, be strong leaders and very customer oriented.

    They will be responsible for managing the camps guest experience, front-of-house management, monitoring standards throughout the lodge, marketing, reservations, operations, human resources, repairs & maintenance, staff training, profitability and conservation liaison.

    Lodge Manager Job Key Responsibilities

    • Provide a welcoming lodge environment for our customers with high standards of service, meals and housekeeping which meet the company’s expectations.
    • Maintain the smooth operation of the Lodge, its facilities, infrastructure, services and functions.
    • Manage all staff reporting to the position so as to effectively assist, train, develop, motivate and monitor their activities.
    • Maintain a safe, harmonious, enjoyable work place environment for staff
    • To lead by example in a positive and enthusiastic manner.
    • Work closely with the General Manager to create a strong management team
    • Prepare and communicate Monthly Management reports to senior management on a regular basis in line with company requirements
    • Gain a clear understanding of the staff duties and ensure that these are carried out to the company standards
    • Complete weekly rotas for the team and maintain correct staffing level at all times
    • Resolve and handle Guest complaints
    • Be accountable for all relevant Product delivery and Stock management
    • Commercial accountability for Budgeting and Financial Management

    Qualifications Lodge Manager Job

    • Qualification in Hotel Management degree/diploma from a reputable institution
    • Over 5 years of experience in a 5 Star hotel or Tented camp
    • Managerial experience in a high end Lodge or Tented Camp
    • Should be experience in using sales force software and Opera – sales and front office
    • Very good computer skills – MS Office Suite
    • Excellent Communication and People skills
    • Excellent customer service skills
    • Hands on and Problem solver
    • Leadership and Management skills
    • Be a good motivator

    Head Chef

    Reporting to the General Manager

    Head Chef Job Responsibilities

    • Be conversant in working with both the hot and cold kitchen
    • Ensures all food is prepared fresh and of highest quality
    • Strictly adheres to all procedures, Company recipes specifications and methods
    • Reports to work on-time and in a clean uniform, attends daily team meetings
    • Responsible for procurement, mise-en-place, and food preparation
    • Maintains an organized and efficient flow of production with regards to changes in forecast and menus
    • Ensures product knowledge is maintained and communicated to all relevant personnel, in particular the Service team
    • Maintains a high standard presentation of dishes at all times
    • Reports waste to supervisors on a daily basis, and is anxious to minimize spoilage
    • Checks station prior to leaving to ensure cleanliness, proper disposal/removal of food, and proper storing and labeling
    • Responsible for food storerooms, including fridge and freezer
    • Takes part in food storage (quality and quantity controls) on a regular basis
    • Maintains hygiene and safety standards for section at all times
    • Trains his/her personnel on a continuous basis
    • Responsible for the proper cleaning and sanitary matters of his/her section.
    • He/She ensures that all the Hot & Cold Kitchen staff members fulfill these requirements and follows up on their performance
    • Handles all working material and equipment with the necessary care and keeps it well cleaned
    • Reports all necessary repairs to Manager and follows up on repairs

    Qualifications for the Head Chef Job

    • Diploma Certification in a culinary discipline from a recognized institution.
    • At least 4 years’ experience in a 5 Star hotel.
    • Ability to follow standard recipes and convert quantities mathematically.
    • Demonstrate a sense of urgency.
