    The Fairmont Norfolk is a historic hotel in Nairobi, Kenya and is owned by the luxury hotel chain, Fairmont Hotels and Resorts. The hotel has 170 rooms, 4 restaurants, and consists of 5 main blocks, each ranging from 1 to 2 stories high. The hotel has a signature Tudor style of architecture that has been maintained since its original construction.

    The knowledge of a great Concierge is the expectation of our Owners and Guests when staying at our Lodge. your ability to anticipate guest needs and make informed suggestions will ensure they have a truly memorable stay. Acting as a liason between Owners, Guests, internal departments, and external vendors, you help ensure not only the Owners and guests enjoy their Lodge experience but assist in making all requests as seamless as possible.

    What you will be doing:

    Reporting to the Front Office Manager, responsibilities and essential job functions include but are not limited to the following: 

    1. Assist guests with all inquiries, both hotel and non-hotel related
    2. Conduct and attend effective shift briefings to ensure hotel activities and operational requirements are known
    3. Maintain good relationship with Airport Concierge
    4. Maintain good relationship with retailers and other service providers within the vicinity and ensure that information on their promotions are up to date
    5. Maintain detailed knowledge of the activities of the day and of key occurrences in your city/location including directions to key points of interests, restaurants, theatres, shopping, cinemas, sporting and recreational facilities, banks, consulates, transport systems and special events
    6. Maintain adequate supplies of forms and brochures and ensure they are presented in line with the hotel’s operating standards
    7. Consult Log Book for information/requests left by outgoing shift
    8. Manage incoming guest mail, messages, facsimiles and special deliveries
    9. Manage all transportation requests
    10. Manage outgoing guest mail, courier services and parcel postage as requested by guests
    11. Maintain order and security of guest keys and other selected keys kept in Front Office, ensuring key issue policy is followed
    12. Receive telephone calls and take messages for guests who are out
    13. Conducts all of the above in accordance with the hotel’s policy, while adhering to Fairmont brand Standards

    Your experience and skills include:

    1. Skilled in Front Office operations and supervision with the ability to work in a multicultural and diverse environment
    2. Minimum 3 - 5 years’ relevant experience with at least 2 year at a Guest services
    3. Penchant for customer service and effectively manage guest complaints
    4. Ability to train and manage a dynamic team
    5. Excellent English communication skills; both verbal and written
    6. Knowledge of Micros or similar POS systems, Opera or similar PMS systems and Microsoft Software

    Senior Chef De Partie

    We are looking for a dynamic, forward-thinking and proactive Senior Chef De Partie  responsible for assisting the Executive Sous Chef and Sous Chef in managing the culinary operation and ensuring that all culinary and stewarding activities are completely aligned with the local and international safety and HACCP regulations as well as values and strategy of the Hotel.

    2. Ensure the consistency in the preparation of all food items for a la carte and/or buffet menus according to hotel recipes and standards
    3. Actively share ideas, opinions and suggestions in daily shift briefings

    5. Liaise daily with Outlet Chefs to keep open lines of communication regarding guest feedback
    6. Continually strive to improve food preparation and presentations
    7. Maintain proper rotation of product in all chillers to minimize wastage/spoilage
    8. Have full knowledge of all menu items, daily features and promotions
    9. Ensure the cleanliness and maintenance of all work areas, utensils, and equipment
    10. Follow kitchen policies, procedures and service standards
    11. Follow all safety and sanitation policies when handling food and beverage

    What you will be doing:

    Reporting to the Executive Chef, responsibilities and essential job functions include but are not limited to the following:             

    1. To assist in the preparation and baking of dough, cookies, muffins, dough, sponges, custards, meringues, mousse, icing, and other pastries.  Able to store and handle all baked goods.
    2. Assist with the set up of banquet functions, outlet orders, and breakfast production.
    3. Monitor and maintain sanitation standards.  Monitor and maintain safety standards
    4. Completes task as assigned by supervisor
    5. Knowledge of custards, cookies, mousse, sponges, meringues, and icings.
    6. Knowledge of mixing methods; creaming, whipping, folding.
    7. Knowledge of finishing methods and techniques.
    8. Basic celebration cake building and icing.
    9. Knowledge of various dough.
    10. Basic knife skills for chopping, cutting, dicing, etc.
    11. Understanding of basic Pastry Kitchen terminology

    Your experience and skills include:

    1. Adhere to Fairmont Appearance & Grooming Guidelines
    2. Two to Four Years of Previous Experience in a Pastry Production Kitchen and/or Restaurant Experience 
    3. Diploma Certification in a Culinary discipline an asset 
    4. Strong interpersonal and problem solving abilities 
    5. Highly responsible & reliable 
    6. Ability to work well under pressure in a fast paced environment 
    7. Ability to work cohesively as part of a team
