    Prep-Cook

    Location: Kitisuru, Nairobi

    Terms of Service: 1-year Contract (renewable on satisfactory performance)

    Salary: KES 22,000 Monthly

    Main Purpose & Scope The Job: The Prep-Cook will be responsible for preparing food products of the highest quality in terms of freshness, taste, and consistency, with strict adherence to food and health guidelines and in accordance with Ankole Grill policies, procedures, and standards established to ensure maximum customer satisfaction.

     

    Responsibilities:

    • Responsible for mis-en-place for the station, set up and stock stations with all necessary supplies.
    • Assists in the preparation of food in a quick and pleasant manner.
    • Strictly adheres to all recipes, methods and instructions from supervisor
    • Assists in the daily cleanup of the kitchen and service areas.
    • Performs major cleaning of refrigerators and storerooms at regularly scheduled intervals as designated by the head chef
    • Reports waste to supervisors on a daily basis
    • Checks station prior to leaving to ensure cleanliness, proper disposal/removal of food, and proper storing and labeling
    • Reports immediately to the cook and or any senior members of the kitchen team any problem or accident occurring in the kitchen
    • Follow the prep list created by chefs to plan duties
    • Label and stock all ingredients on shelves so they can be organized and easily accessible.
    • Measure ingredients and seasonings to be used in cooking
    • Prepare cooking ingredients by washing and chopping vegetables, cutting meat etc.
    • Undertake basic cooking duties.
    • Maintain a clean and orderly kitchen by sanitizing surfaces, taking out trash etc.
    • Ensure all food and other items are stored properly
    • Comply with nutrition and sanitation guidelines

    Qualifications

    • 3 years’ experience in the hospitality industry in a similar role preferably in a 4 star or 5 Star establishment.
    • Diploma or certificate in food production,
    • HACCP and hygiene training
    • Practical culinary skills
    • Familiarity with professional kitchen equipment.
    • Understanding of food safety practices
    • Able to work under pressure and long hours

    Steward

    Location: Kitisuru, Nairobi

    Terms of Service: 1-year Contract (renewable on satisfactory performance)

    Salary: KES 18,000 Monthly

    Main Purpose & Scope The Job: The Steward will maintain the cleanliness of all the Food & Beverage production areas, handle the ware washing, cleaning and sanitizing all the kitchen equipment and utensils and maintain the cleanliness of all the food stores in accordance with Ankole Grill policies, procedures, and standards established to ensure maximum customer satisfaction.

    Responsibilities:

    • Operate and maintain cleaning equipment and tools, including the dish washing machine.
    • Cares for all the operating equipment at the wash up area.
    • Checks and ensures that the wash-up area is kept clean and tidy at all times.
    • Wash Checks and ensures that the wash-up is kept clean and tidy at all times and disinfect kitchen and store room areas, tables, tools, knives and equipment.
    • Ensure clean wares are stored in appropriate areas.
    • Use detergent, rinsing, and sanitizing chemicals to clean dishes.
    • Controls the utilization and proper use of cleaning agents/ materials.
    • Ensures that proper hygiene is maintained at the wash-up by ensuring the use of correct cleaning materials for various equipment.
    • Ensures that there is adequate cleaned and wiped cutlery, crockery and other service equipment at all times during service.
    • Ensures that all food production areas, and stores are kept in very clean conditions.
    • Rack and spray all racked items with hot water to loosen and remove food residue.
    • Inspect, pull, and stack cleaned items, send soiled items back for re-scrubbing and re-washing.
    • Sort, soak, and wash/re-wash silverware.
    • Empty and maintain trash cans and dumpster area.
    • Clean and mop all areas in assigned department.
    • In addition to the above, the steward may be given such other duties, as the Management may deem necessary.

    Qualifications

    • 3 years’ experience in the hospitality industry in a similar role preferably in a 4 star or 5 Star establishment.
    • High school graduate or equivalent experience.
    • Hospitality certification is a plus.
    • HACCP and hygiene training.
    • Ability to operate dishwashing machines.
    • Good working knowledge of detergents.

    Host / Hostess

    Salary: KES 25,000 Monthly

    Main Purpose & Scope The Job: The Host/Hostess will be responsible for greeting and seating guests in the restaurant. The Host/Hostess will ensure that guests to the restaurant are greeted courteously and promptly and assisted with any needs in accordance with Ankole Grill Limited policies, procedures, and standards established to ensure maximum customer satisfaction.

    Responsibilities:

    • Greet incoming guests warmly with a pleasant smile and eye contact.
    • Welcome guests to the restaurant promptly and professionally and seat them with menus and wine list as per Ankole Grill guidelines.
    • Document customer feedback to the restaurant manager
    • Dealing with any guest issues but escalating any which cannot be resolved on the spot.
    • Controlling guest traffic to various stations.
    • Ensure reservations book is up to date and any bookings communicated to team
    • Assisting waiters if and when they get overwhelmed.
    • Interacts with guests in and as they leave the restaurant to ensure positive dining experience and give guests a pleasant parting comment and invite them back
    • Ensure place settings are appropriate and each guest has a napkin, clean silverware, and any other item that is part of the Ankole Grill standard place setting.
    • Move and arrange tables, chairs, and settings and organize seating for groups with special needs.
    • Advise guests who their assigned waiter/waitress will be as per Ankole Grill guidelines.
    • Ensure the reservation diary is kept up to date with all guest names, telephone numbers, guest information and special requests.
    • Adhere to the daily checklists and notify management of any discrepancies.
    • Check menus to ensure they are current, clean, plentiful, and wrinkle-free.
    • Adhere to scheduled work times by reporting promptly as scheduled.
    • Acquire a working knowledge and local information to respond to guest questions in these areas as required.
    • In addition to the above, the Hostess may be given such other duties, as the Management may deem necessary.

    Qualifications

    • 3 years’ experience in the hospitality industry in a similar role preferably in a 4 star or 5 Star establishment.

    Head Steward

    Main Purpose & Scope The Job: The Head Steward will supervise the cleaning of all the Food & Beverage production areas and kitchen wares from all outlets by Kitchen Stewards in accordance with Ankole Grill policies, procedures, and standards established to ensure maximum customer satisfaction.

    Responsibilities:

    • Supervise the operation and maintenance of cleaning equipment and tools, including the dish washing machine, hand wash stations pot-scrubbing station, and trash compactor.
    • Operate and maintain cleaning equipment and tools, including the dish washing machine.
    • Supervise the washing and disinfecting of the kitchen and storeroom areas, tables, tools, knives, and equipment as per Ankole Grill guidelines.
    • Work with the Events team to set up conference and banquet areas.
    • Supervise the disposal, collection, and cleaning of the refuse area.
    • Assist in the creation of weekly schedules ensuring you maintain adequate staffing levels to meet business demands and maintaining staff budgeting.
    • Check the daily function sheet and make sure that the buffet dishes and other kitchen equipment needed for the function are ready when needed.
    • Assign effective work schedules to Kitchen Stewards.
    • Maximize productivity from all steward staff under your shift.
    • Report any maintenance and or hazard issues to the supervisor on duty.
    • Ensure the safe storage, care and use of any chemicals, as per Ankole Grill guidelines.
    • Adhere to the daily checklists and notify management of any discrepancies.
    • Adhere to scheduled work times by reporting promptly as scheduled.
    • Ensure all equipment is clean and in good working order
    • Check all chemical levels and inventory.

    Main Purpose & Scope The Job: The Waiter/Waitress will be responsible for serving food & beverage items in the restaurant. They will ensure the prompt and courteous serving of guests with food and beverage items as requested in an efficient manner in accordance with Ankole Grill Limited policies, procedures, and standards established to ensure maximum customer satisfaction

    Responsibilities:

    • Operates as the principal salesperson in the restaurant and ensures that guests are accorded a high level of customer care.
    • Prepares mise-en-place for restaurant service.
    • Ensures that the tables are well arranged and wiped before set-up is done.
    • Ensures that the cutlery and crockery used by the guests are clean and properly polished.
    • Sorts and polishes all menus before presenting them to the guests.
    • Ensures that the glasses used for serving guests are clean and well-polished.
    • Promptly and courteously takes orders for food and beverage from guests, posts the same in the POS and serves accordingly.
    • Confirm food and beverage orders as per Ankole Grill service guidelines.
    • Accurately records, pre-checks and picks-up all food and beverage orders as per Ankole Grill service guidelines
    • Have a thorough understanding and knowledge of all food and beverage items on the menu and be able to recommend Food and Beverage combinations and up sell alternatives.
    • Informs and explains all the day’s specials and makes suggestions on food & beverage items to the guests.
    • Up-sell or promote all specials as well as promoting slow moving items.
    • Draws a table plan for orders taken on each table.
    • Follow the right procedures when serving wines.
    • Ensures that the guest orders are served correctly (as per the guests’ specifications).
    • Makes follow up on all orders posted.
    • Keeps the guests informed of new developments in case of any delays.
    • In addition to the above, the Waiter may be given such other duties, as the Management may deem necessary.

    Qualifications

    • 3 years’ experience in the hospitality industry in a similar role preferably in a 4 star or 5 Star establishment.
    • Diploma or Certificate in Food and Beverage Service and Sales or its equivalent from a recognized institution.

    Back-Waiter

    Main Purpose & Scope The Job

     

    The Back Waiter will assist front waiters by performing a variety of tasks to ensure the prompt and courteous delivery of service in an efficient manner in accordance with Ankole Grill Limited policies, procedures, and standards established to ensure maximum customer satisfaction.

    Responsibilities:

    • Assist in the cleaning and polishing of all tableware and all glasses for waiters and the bar.
    • Replenishing table supplies.
    • Assists the waiters in mise-en-place for restaurant service.
    • Transports all the soiled items to the wash-up.
    • Ensures that the bars are supplied with clean and well-polished glasses.
    • Arrange seats and tables at the furniture store.
    • Sets up and cleans the glass wash-up.
    • Assists the F &B Controllers with stocktake of all operating equipment.
    • Ensures that the restaurant is re-swept after the opening duties.
    • Participate in cleaning the restaurant.
    • Accommodating any other special requests.
    • In addition to the above, the Back Waiter may be given such other duties, as the Management may deem necessary.

    Qualifications

    • 3 years’ experience in the hospitality industry in a similar role preferably in a 4 star or 5 Star establishment.
    • Diploma or Certificate in Food and Beverage Service and Sales or its equivalent from a recognized institution.
    • Hospitality certification is a plus.
    • Excellent reading, verbal and written English skills.
