    Sous Chef

    Job Description

    At the moment we're looking for a Sous Chef Banquet Operations to join our energetic, enthusiastic and passionate team at InterContinental Nairobi.

    Your day to day

    • Demonstrate service attributes in accordance with industry expectations and company standards in the leadership position of a Sous Chef.
    • Maintain a high level of product and service knowledge about all InterContinental Hotels Group hotels in our region and all F&B Banquet activities.
    • Assists Executive chef/ Executive Sous chef in developing popular menus offering guests value for money in accordance with IHG guidelines
    • Handle all guest and internal customer complain and inquiries in a courteous and efficient manner, following through to make sure the problems are resolved satisfactorily and recorded.
    • Ensures that all company minimum brand standards have been implemented, and that optional brand standards have been implemented where appropriate.
    • Oversees the quality and variety of food served in the Banquet outlets ensuring that they have up to date operational procedures.
    • Ensure all security incidents, accidents and near misses are always logged in timely manner and brought to the attention of the Food and Beverage Manager/ Executive chef/ Executive Sous chef as per Fire Life & Safety (FLS) procedures.
    • Monitors all operations(scheduling), especially during peak business periods, working through the respective Head of kitchen sections (CDP’S) to make adjustments where necessary
    • Ensures that all recipes, food preparations, and presentations meet intercontinental Nairobi specifications and commitment to quality.
    • Assists in proactively managing kitchen costs based on key performance indicators, working through the respective Heads of Department (Executive chef/ Executive Sous chef, cost control, banquets and events) as appropriate
    • Assists the Executive chef/ Sous chef in setting Food Production goals and developing strategies, procedures and policies to achieve the same.
    • Assist the Executive chef/ Executive Sous chef in the maintaining of food costs through control in wastage, purchasing and storing
    • Responsible for creating enticing menus for review and approval by Executive chef/ Executive Sous chef Prepare daily production sheet for every banquet function, menu costings among others.

    Health Club Supervisor

    Job Description

    Your day to day

    Under the general guidance and supervision of the Front Office Manager or his/her designate within the limits of established InterContinental Hotel Group (IHG) policies, procedures, provides friendly and courteous service in the Health Club to customers in accordance with departmental standards and procedures whilst taking a lead role in service delivery.

    • Come up with revenue generation strategies in partnership with other outlets and Hotel programs
    • Identify and customize packages for target clients in order to up sell Health Centre usage and Massage sessions.
    • Review pricing against market trends and demand and update accordingly in liaison with Finance and Management.
    • Prepare and check monthly budgets and generating income channels
    • Responsible for driving revenues from gym membership at the correct rates
    • Ensure timely renewal notices/Invoices are issued to members in liaison with Finance
    • Ensures that all payments for services rendered at the Health Centre are receipted and accounted for.
    • Actively participate in training and development programs and maximize opportunities for self and team development.
    • Monitor and maintain team discipline in accordance to Company regulations
    • Prepare training and development plans.
    • Performs Fitness centre departmental induction, performance evaluation and coaching
    • Be completely conversant with and adhere to the hotel’s health and safety policy and procedures.
    • Inspects the Fitness Centre and swimming pool.
    • Lead team to achieve total fitness experience for all members
    • Handle and take appropriate action to track and resolve guest complaints or any incidents.
    • Check customer satisfaction by monitoring Guest Heartbeat scores and internal feedback.
    • Be able to promote the hotel (and InterContinental Hotels Group generally) products and services.
    • Maintain a high level of product and service knowledge about all InterContinental Hotels Group hotels in your region.
    • Conduct personal training and group sessions with clients, adhering to incentive agreement guidelines for fitness service limits.
    • Ensure that all fitness team members maintain knowledge of current pricing and promotions among others.

    Food Hygiene Officer

    Job Description

    You'll be an integral member of the hotel's management team, providing expertise and direction for all aspects of the Food & Beverage hygiene.

    Reporting directly to the Resident Manager, you will be expected to audit workplaces to ensure that workers and the public are protected from dangerous or unsafe conditions. Inspect work spaces and machinery to verify that it is safe, and study the effects that businesses have on the surrounding environment.

    Some other key responsibilities are, but not limited to

    • Implementation of ISO certification, be fully familiar with local Food Hygiene and ISO guidelines
    • Maintains records of Food Safety and Hygiene related forms, checks and Audits.
    • Conduct hygiene audit of all kitchen associates and provide feedback.
    • Conduct regular spot checks on food items received for temperature abuse.
    • Inspect food holding and transport equipment.
    • Checking that all food items for storage are covered, dated, labeled.
    • Conducts daily kitchen inspections on the personal, environmental and food hygiene conditions and provides a corrective action plan and keeps records on the findings.
    • Checks daily cleaning status in kitchens with respective kitchen managers and stewarding. Ensures the temperature of refrigerators and freezers are up to the standard. Coordinate microbial food tests with kitchens and laboratory in case of new products/suppliers and suspected food borne illness complaints.
    • Conduct vendor inspection with the Purchasing team and Executive Chef.
    • Liaises with Pest Control Company and House Keeping for any pest issues in the operations, and reviews the pest control performance.
    • Maintain and make improvements to hygiene standards.
    • Maintains documentation on all hygiene and food safety standards throughout the operation.
    • Works closely with the Learning & Development Manager to conducts Food Handlers Training sessions to all food handlers.
    • Regular review of food safety standards of all food handlers within the hotel premises among others.

    What we need from you

    • A person who will be diligent and adhere to local regulations concerning health, safety, or other compliance requirements, as well as brand standards and local policies and procedures.
    • Ideally, you'll have 4 years related experience, including supervisory experience, or an equivalent combination of education and experience.
    • Bachelor's degree in Food Hygiene/Public Health/Occupational Health or any related field. Demonstrated ability to interact with customers, employees and third parties that reflects highly on the hotel, the brand and the Company.

    In this position under the general guidelines and supervision of the Chief Engineer and within the established InterContinental Hotels Group and local hotel policies and procedures will be responsible for maintaining all aspects of A/C and Refrigeration and regularity within the hotel premises.

    • Basic electrical wiring training and national trade test on electrical wiring is an added advantage for this role.
    • Experience on Chillers service & maintenance required.

    Your day to day
