    Sous Chefs-5 Star Hotel

    Job Overview

    Our client is a distinguished hospitality company operating within the luxury hotel sector, offering premium accommodation, dining, and guest experiences. The organization specializes in an Italian culinary concept, and is known for its commitment to exceptional culinary standards, refined service delivery, and the use of high-quality ingredients to create memorable dining experiences for guests.

    They are currently looking for an experienced Sous Chef to support the Executive Chef in managing kitchen operations, maintaining five-star culinary standards, and leading the kitchen team to deliver exceptional dishes consistently. The ideal candidate should have experience working in the same position or as a Senior Chef de Partie in a five-star establishment, possess strong leadership skills, and demonstrate well-rounded expertise across all sections of the kitchen.

    Key Responsibilities

    • Support the Executive Chef in overseeing daily kitchen operations to ensure the highest culinary standards expected in a five-star hospitality environment are maintained always.
    • Supervise and guide junior chefs, including Chef de Parties, Demi Chef de Parties, and Commis Chefs, ensuring proper training, discipline, and performance within the kitchen team.
    • Demonstrate strong leadership by organizing kitchen operations efficiently, delegating responsibilities appropriately, and ensuring smooth coordination across all kitchen sections.
    • Ensure all dishes are prepared and presented according to the hotel’s strict quality, taste, and plating standards.
    • Act as an all-rounder in the kitchen by supporting and overseeing all sections including hot kitchen, cold kitchen, pastry, garde manger, and butchery where necessary.
    • Participate in menu engineering and menu development, ensuring dishes are innovative, cost-effective, and aligned with the hotel’s culinary concept and guest expectations.
    • Oversee food plating and presentation to ensure every dish leaving the kitchen reflects the refined standards of a luxury hospitality establishment.
    • Monitor and control food costs, portioning, and wastage to ensure kitchen operations remain within the allocated budget.
    • Ensure strict adherence to HACCP standards and food safety regulations, maintaining the highest levels of hygiene and sanitation within the kitchen.
    • Conduct routine inspections of kitchen operations to ensure compliance with health, safety, and hygiene requirements.
    • Manage inventory levels, coordinate with the store and procurement teams, and ensure that ingredients and supplies are always available for kitchen operations.
    • Assist in planning and executing special events, banquets, and high-volume service periods while maintaining consistent quality standards.
    • Train and mentor junior kitchen staff to enhance their culinary skills, productivity, and knowledge of luxury hospitality standards.
    • Step in to lead kitchen operations in the absence of the Executive Chef and ensure smooth service delivery.

    Requirements

    Key Qualifications

    • Proven experience as a Sous Chef or Senior Chef de Partie in a five-star hotel or luxury hospitality establishment.
    • Strong leadership and team management skills with the ability to supervise and motivate a diverse kitchen team.
    • Well-rounded culinary expertise with knowledge and practical experience across multiple kitchen sections.
    • Strong understanding of menu engineering, menu planning, and modern food plating techniques.
    • Solid knowledge of HACCP standards, food safety regulations, and kitchen hygiene practices.
    • Demonstrated experience in food cost control, portion control, and minimizing wastage.
    • Ability to work effectively in a fast-paced, high-pressure kitchen environment while maintaining attention to detail.
    • Culinary diploma or certification in Food Production, Culinary Arts, or a related field.

    Category Lead Marketing – Hygiene

    Key Responsibilities
    Category Strategy & Planning

    • Develop and execute the annual marketing plan for the Food & Snacks portfolio, aligned to growth and profitability targets.
    • Identify consumer and channel opportunities across subcategories (noodles, cereals, snacks) to drive penetration and frequency.
    • Translate consumer insights and category trends (nutrition, convenience, youth snacking, affordability) into actionable marketing initiatives.

    Brand Management & Communication

    • Lead brand positioning, communication, and innovation storytelling for brands such as Noodies, Shapies,
    • Fillows, Elbbin & Nibble (and other emerging products).
    • Build and execute 360° marketing campaigns (ATL, digital, in-store) that drive awareness, trial, and loyalty.
    • Ensure cohesive messaging across packaging, advertising, and promotions to strengthen BIDCO’s brand identity.

    Trade & Channel Activation

    • Design and implement trade activation plans that drive visibility, conversion, and distribution for core and new products.
    • Partner with sales and RTM teams to ensure flawless execution of promotions across general trade, modern trade, and institutional channels.
    • Measure activation ROI and continuously optimize channel investments.

    Innovation & Portfolio Development

    • Support innovation projects — from concept development and packaging design to launch execution.
    • Work with R&D, Supply Chain, and Sales to ensure launches are commercially viable and meet consumer needs.
    • Lead post-launch reviews and performance tracking to refine the innovation pipeline.

    Data & Performance Management

    • Track category performance (brand health, volume, share, and profitability) using dashboards and external data.
    • Use insights to guide pricing, portfolio prioritization, and marketing investment.
    • Prepare quarterly category reviews and business updates for leadership.

    Requirements
    Education:

    • Bachelor’s degree in Marketing, Business Administration, or related field. CIM or MBA preferred.

    Experience:

    • 5–8 years in FMCG marketing, with at least 3 years in food, snacks, or similar category management roles.
    • Proven experience managing brands targeting youth, family, and mass-market segments.
    • Strong understanding of both traditional and modern trade in Kenya and East Africa.
    • Analytical thinker with creative problem-solving and execution discipline.
    • Experience managing agencies, budgets, and promotional programs.

    Preferred:

    • Experience with NPD, flavor innovation, and packaging design for food/snack brands.
    • Exposure to digital and influencer marketing campaigns.
    • Familiarity with SAP (S4HANA), BI dashboards, or marketing analytics tools.

    Category Lead Marketing Beverages

    Key Responsibilities
    Category Strategy & Planning

    • Develop and execute the annual marketing plan for the Beverages portfolio, aligned to growth and profitability targets.
    • Identify category and channel growth opportunities (e.g., health & wellness trends, on-the-go consumption, pack innovation).
    • Translate consumer and shopper insights into actionable brand and trade marketing initiatives.

    Brand Management & Communication

    • Lead brand positioning and communication for flagship brands such as Planet, Jooz, Juo, Reaktor Simba, and new innovations in the pipeline.
    • Build and execute ATL, BTL, and digital campaigns that drive preference and differentiation in a competitive beverage market.
    • Ensure consistent brand storytelling across advertising, packaging, and point-of-sale materials.

    Trade & Channel Activation

    • Design and implement trade marketing and in-store activation plans in collaboration with the Sales and RTM teams.
    • Partner with distributors and key accounts to strengthen visibility and availability across channels — GT, MT, and HoReCa.
    • Measure activation ROI and continuously optimize trade spend effectiveness.

    Innovation & Portfolio Development

    • Support innovation and NPD (new product development) projects — from consumer testing to launch execution.
    • Collaborate with R&D, Supply Chain, and Sales to ensure new launches are well-supported and tracked post-launch.
    • Identify whitespace opportunities for category expansion (e.g., hydration, flavored water, energy, or functional drinks).

    Data & Performance Management

    • Monitor brand health, category share, pricing, and volume KPIs using internal dashboards and market research.
    • Use insights to guide portfolio prioritization and marketing investment decisions.
    • Prepare quarterly category performance reports and business reviews for leadership.

    Requirements

    Education:

    • Bachelor’s degree in Marketing, Business Administration, or related field. CIM or MBA preferred.

    Experience:

    • 5–8 years in FMCG marketing with at least 3 years in beverage, food, or related category management.
    • Proven track record in brand and trade marketing within a competitive consumer goods environment.
    • Deep understanding of both traditional and modern trade dynamics in Kenya and East Africa.
    • Strong analytical, commercial, and execution skills with experience managing agencies and budgets.

    Preferred:

    • Experience in the beverage industry (juices, soft drinks, water, or functional beverages).
