    F&B Controller

    Job Description

    To coordinate advice and ensure that all operating stocks in the hotel are controlled, monitored and documented as per procedures.

    Indicators Of Good Performance On The Job

    • F&B Controls/standards developed, implemented and maintained
    • Cost management and storage systems developed, implemented and maintained
    • Costing schedules developed and implemented
    • Accurate and timely reports
    • Accurate stock taking, returns and reconciliations
    • Accurate pricing and billing of food and beverages

    F&B Controller Job Responsibilities

    • Ensure up to date cost price of all food & beverage items availability to ensure careful purchasing.
    • Keep an up to date record of all departmental monthly expenditure of items to ensure strict budgeting
    • On a daily basis receive from stores, the goods received note and analyze as specified in food & beverage procedures.
    • Carry our spot checks on bin cards.
    • Prepare daily kitchen food cost and submit to the Executive Chef.
    • Periodical checks on the value of the restaurant food as compared to posted food totals by the cashiers
    • Maintain an up to date list of all cost/ prices, ensure that all the cost /prices measure and advice on variations.
    • Ensure daily stock takes in bars and give the required information to the Finance Manager / Hotel Accountant.
    • Inform Finance Manager of all over budget costs and discrepancies in procedures.
    • Participate in monthly Departmental stock take activities.
    • Prepare monthly expenditure and monthly stocks balances reports.
    • Performs any other duties that may be assigned from time to time.

    Qualifications for the F&B Controller Job

    • Minimum ‘O’ level education with at least KCSE Grade C or equivalent.
    • Diploma in Hotel management with preference to Food & beverage services from a recognized institution, a minimum of CPA II, CPA K will be an added advantage.
    • Minimum of 3 years in a similar position.
    • Computer proficiency with experience of sun system micros, opera, materials control etc
